Dairy-Free Dark Chocolate Covered Strawberries

Are you a chocolate lover? I sure am!! These chocolate covered strawberries are SUPER easy! I used Lily’s dairy-free dark chocolate chips because they’re sweetened with stevia and erythritol, for a sweet treat that won’t spike your blood sugar.

The full-fat coconut milk adds some creaminess and healthy fats to this tasty treat!

Ingredients

1/4 cup stevia-sweetened Lily’s dark chocolate chips (there are milk and dark chocolate options)

1-2 Tbsp coconut milk (be sure to use full-fat from a can)* see notes

Directions

  1. Melt chocolate chips in a deep bowl and microwave at 15 second increments until melted, or melt in a small glass bowl over a pot of water on the stove.

  2. Add coconut milk and mix well.

  3. Dip strawberries in chocolate and place on a parchment-lined baking tray.

  4. Freeze for 10 minutes, or until chocolate hardens

  5. Enjoy!!



Notes:

* These are best eaten right away, but can be stored in the fridge for a day.

*1 Tbsp of coconut milk will give you a more solid chocolate coating, 1 will be softer and more creamy.
