Immune-Boosting Turmeric Ginger Cauliflower Soup

I love soup because you can add a ton of healthy, nutritious ingredients and blend them all up into one nourishing meal!

It’s important that we eat to nourish our bodies and support our immune systems all throughout the year. Why?

Your gut and immune system play a crucial role in whether or not you get knocked down by any bug going around. Supporting the host (aka your immune system) is so much more important than simply going after pathogenic bacteria or viruses. If your gut and immune system are in top shape, you can fight off anything!

Now for the recipe!

Ingredients

  • 1 chunk of fresh ginger (about the size of your thumb), minced

  • 1 Tbsp ground turmeric (or fresh)

  • 1 medium onion, diced

  • 3 cloves garlic, minced

  • 1 small head cauliflower, cut into medium-sized chunks

  • 3 medium carrots, cut into small chunks

  • 4 cups bone broth (or vegetable broth)

  • 1 cup full-fat coconut milk

  • 1/2 tsp red chili flakes

  • Pink Himalayan salt and pepper to taste

  • 1 tsp fenugreek powder

  • 1 Tbsp coconut oil or fat from the top of the broth

Optional: add 1 tsp both oregano and thyme (for an extra immune-boosting punch!)

Directions:

  1. Add the fat to the instant pot and set to sauté mode. 

  2. Add minced ginger, garlic and onions to warmed oil and sauté until softened.

  3. Turn off the instant pot and add the rest of the ingredients.

  4. Set to manual/high pressure for 12 minutes.

  5. Quick release and transfer in batches into a high-speed blender or use an immersion blender.

  6. Serve!

Notes:

  • I like blending about ¾ of the soup and leaving the rest chunky for texture.

  • You can add in lentils or chicken for extra protein. I think I’ll try adding the dry lentils right into the instant pot next time and cooking it all together!
