Sugar-Free Strawberry Chia Seed Pudding

Chia seed pudding is a great, easy breakfast or dessert option. This recipe tastes great and doesn’t contain any added sugars - natural sweeteners only! 


Fun Facts About Chia Seeds:

  • Rich in omega-3 fats

  • Support the heart, brain and mental health

  • Rich in fibre and great for gut health

  • Help remove toxins and aid weight loss

  • Good source of plant-based protein



Pudding Ingredients:

  • ¼ cup chia seeds (ideally raw)

  • ½ Tbsp ground flaxseed (ideally raw)

  • ½ scoop Ancient Nutrition Vanilla Bone Broth Protein (optional, but adds some sweetness from the monk fruit)

  • 1 tsp cinnamon

  • 1 Tbsp Manitoba Harvest hemp hearts

  • ¼-½ tsp himalayan sea salt

  • 1 cup unsweetened coconut, almond, or other plant-based milk (I used ½ thai kitchen full-fat coconut milk & ½ so delicious unsweetened coconut milk)

  • 1 tsp pure vanilla extract (if not adding vanilla protein)

  • 1 Tbsp 100% pure maple syrup or melted raw honey (optional)

Strawberry Topping:

  • 1 cup frozen organic strawberries


optional (but recommended!) toppings:

  • A drizzle of raw almond butter

  • Unsweetened, unsulphured shredded coconut

  • More cinnamon & hemp hearts

Directions:

  1. Add all dry ingredients and mix well

  2. Add plant-based milk and mix well

  3. Let the mixture sit for 5-7 minutes to thicken and gel up

  4. While pudding is thickening, add strawberries to a pot on the stove and warm on medium heat until softened.

  5. Top with cooked strawberries and other toppings and enjoy!


Tip: You can also make this recipe the night before so it’s ready to go in the morning!
